Hmmm Portugal, it is impossible to think of Portugal without thinking COD. Cod is a fish that somehow reminds me a lot of a fish from my hometown,which is one of my favourite . Before arriving in Portugal the only dish made with cod I knew was bacalhau a gomes de Sá, which til this day is my favorite. But little did I know that there are so many different dishes, today I bring to you, an unusual recipe but a real delight “Cream of cod with roasted peppers”. This dish serves only 4 and it will only take 35 min .
Ingredients
- 2 soaked cod pieces
- 1.20 l of water
- 1 green pepper
- 1red pepper
- 1 onion
- 4 cloves of garlic
- 1 dl of olive oi
- 300g of potatoes
- salt
- pepper
- 1 branch of mint from the river
How to prepare
- Cook the cod in boiling water for 5 minutes;
- Let it cool in the broth;
- Roast the peppers and clean them ( remove the skin and seeds by dipping them in cold water);
- Sauté the chopped onion and garlic in olive oil;
- Add the potatoes in pieces and drizzle with cod stock;
- Cook over low heat for 10 minutes;
- Remove the bones and skin from the code, and add it to the previous preparation , also add half of the roasted peppers in strips ;
- Grind until you obtain a creamy texture;
- Season with salt and pepper and arrange the cream on serving plates;
- Add the cod in chips and strips of pepper ( the half that wasn´t used );
- Flavor with the mint from the river and then serve:
